New Spa Restaurant In South Beach

Essensia Restaurant & Lounge at The Palms Hotel & Spa (3025 Collins Ave., South Beach) will be making its debut this Mother's Day, May 10th, with a holiday brunch. The Palms' executive chef Gerd Richter has created a menu of "nourishing gourmet cuisine" that according to Maria Bond, Director of Food & Beverage, "is not only good for your body but also for your mind and soul." Specifically, the menu promises to be composed of "sustainable seafood, hormone-free meats, detoxifying ingredients and organically grown products, whenever possible" -- that last phrase an oft-used caveat large enough to drive a Sysco truck through.

More specifically still, the menu will include appetizers & little plates, entrĂ©es from the land and sea, spa offerings, pastas,  desserts, homemade multi-grain breads, organic Starbucks coffees grown in Latin America and East Africa, and a variety of organic wines and spirits.

Signature dishes include a salmon, shrimp, and scallop ceviche tasting; pan-roasted Florida grouper with phyllo "cigar" of bulghur wheat, raisins, onions, apricots, and herbs; and Tupelo honey-and-thyme glazed duck breast with grilled peaches (Tupelo honey is grown solely in the Northwest Basins of Northwest Florida).
   
Essensia will be open seven days per week for breakfast, lunch, and dinner (complimentary valet parking with dinner). For reservations, call 305-908-5458.
