One made carabales cheese and walnut empanadas with pear compote.  Another, grilled Florida grouper with "bean escabeche" and buñuelos.  There was barbeque quail salad with poached egg and passion fruit vinaigrette.  Down Island French Toast with foie gras, brioche, and curaçao melted in mouths.  The smoked Scottish salmon on warm sweet bread with potato hash, crème fraîche, caviar, and horshradish oil would not be overlooked.  A spread totaling 14 dishes unfolded for a "Tropical Tribute for Julia Child at The Kampong" on November 15, 1992, which begs the question: Where are the corn pecan waffles with homemade chorizo and tropical syrup nowadays when you need 'em?!
