Daniel Boulud's db Bistro Moderne To Debut in Miami

The restaurant space is being designed by prestigious firm Yabu Pushelberg as a fresh, chic interpretation of the quintessential bistro. Signature décor elements will include a grand staircase lined with a ceramic art installation, a jewel box wine room encrusted with various colored glasses and custom luminescent ceiling fixtures.
This marks Boulud's first foray into the Miami market, although he does have his eponymous Café Boulud at the Brazilian Court Hotel in nearby Palm Beach. This will be Boulud's third db Bistro Moderne, with sister locations in New York City and Vancouver.
Executive chef Jarrod Verbiak, an eight-year veteran with Boulud, will be helming the kitchen. While the Miami menu has not been released yet, we perused its counterpart in New York and found dishes like country duck pate with pickled vegetables; curried tuna tartare with pink radishes, celery, mango and quinoa naan bread; escargot and chicken oyster fricassee with hazelnut spaetzle; bacon veiled salmon with potato gnocchi, chanterelles, English peas and bacon jus; sautéed lemon sole with fingerling potatoes; coq au vin with bacon and spaetzle; crispy duck confit with wild mushrooms, broccoli rabe and sweet and sour duck jus; and tomato tarte tatin with goat cheese, frisee and black olives.
In addition to this superstar chef-driven eatery, the 313-room property will also feature a full-service spa, Jim McLean Golf School (including instruction, golf simulators, putting greens and pro shop), state-of-the-art fitness center, virtual bowling and billiard room, 10,000-square foot NBA-approved basketball court and more than 80,000 square feet of meeting space.
