Opening Date Announced for New Eden Roc Restaurant, 1500º, With Chef Paula DaSilva

Now nearly seven months after the announcement that celebrity chef Paula DaSilva left 3030 Ocean in Broward, Short Order just received word that the Eden Roc's new restaurant, 1500º, will be opening to the public next Friday, October 15. The 160-seater farm-to-table concept decorated with vintage milk cans, floor-to-ceiling windows, and fruit trees, will offer a menu described as relying "heavily on local resources." But don't expect selections to only include rabbit food: the restaurant's enigmatic name is a tribute to the temperature at which its steaks will be broiled.

Small plates will include dishes like roasted beets with seared goat cheese and jumbo lump crab cakes with Old Bay aioli. "Mainplates," like the hickory-rubed pork loin with polenta, will range in price from $25 to $42 and sides, like hand-cut duck fat fries and Carolina rice with chorizo, will be served a la carte. A $35 per person chef's tasting menu will also be offered. Pastry chef Jenny Rissone is still developing the dessert menu.

DaSilva worked under Dean Max at 3030 Ocean and was a finalist on Hell's Kitchen. Stay tuned for an exclusive interview with the chef coming soon.
