The New Blue at the Delano (is Blue Door Fish)
Most folks know that Claude Troisgros' father and uncle created Nouvelle Cuisine and collect Michelin stars like some folks collect postage stamps. Now the fourth generation, Claude's son Thomas, has joined the family tradition and worked with his dad on this new Blue Door Fish menu.
Here are some dishes to look forward to:
Caramelized Octopus with garlic, shallots and Dijon mustard served with a black olive potato salad ($15); Scallops a la Plancha with brown butter sauce, garlic, lemon, parsley and pine nuts ($18); Yellowfin Tuna seared au poivre with truffled frites ($33); Red Snapper grilled with an Antiboise sauce of tomato, black olives, capers, anchovy & basil, with bok choy with garlic chips ($28); Cobia seared with preserved lemon & fresh herbs and served with crushed potatoes ($28) and Shrimp over risotto with a saffron bouillabaisse-style sauce ($34). Prime steaks, lamb, and chicken dishes will also be available. All fish, shellfish, and meats can also be ordered simply a la plancha (on the griddle) with choice of sauces.
The décor is bluer than before, with lots of steely silver tones with blue hues. The original Venetian mirrored table remains, but now has a a vintage Kalmar glass chandelier, comprised of 500 individual glass ball elements, hanging over it. Tables are made of metallic driftwood, a reflection of the surrounding beach and ocean.
Blue Door Fish is open for dinner from 7 to 11:30 p.m. daily, breakfast from 7 to 11:30 a.m. and lunch from 11:30 a.m. to 4 p.m. Breakfast and lunch will continue to be served as part of Blue Door Breakfast and Plat Bleu Lunch, but will also feature selected items from Blue Door Fish.
