The Ms. Cheezious grilled cheese truck debuts this week, flanked with a pinup girl logo. The menu showcases the classic comfort food, without veering into overwrought combinations. They'll offer a crab salad and cheddar melt, bacon and blue cheese on sourdough, an apple and havarti on multi-grain, and a ricotta and orange marmalade on Texas toast, among other things.

You can also custom build your own grilled cheese made with your choice of eight cheeses and a selection of other toppings like tomatoes and bacon. Combine it with sides like tomato soup, gravy, chili, or sweet potato fries, and you have a meal.

Co-owners Brian and Fatima Mullins know that when it comes to grilled cheese, sometimes basic is the best. In some of their pre-debut tastings, American cheese on white bread was consistently rated most popular by their guinea pigs.

For those of us who love to eat cheese (and for the USDA's Dairy Management Dept), these are golden days. American demand for cheese is off the charts, according to industry experts. Thus, Miami now has a second cheese-based food truck.

We still don't have any mac and cheese trucks, but I won't be surprised to see one sometime soon. Check out the full Ms. Cheezious menu here and follow them @MsCheezious to find out their exact locations during Art Basel.
