The Royal's tuna Niçoise salad is the closest thing to a perfect lunch in a perfect Miami Beach setting. This salad brings slight modern twists to the classic, but the beauty is in the simplicity -- the salad is crisp and fresh, with fresh local tomatoes, baby potatoes, and haricot verts cooked and blanched to perfection. Quail eggs are a lovely surprise, and the ahi tuna is seared beautifully. The result is a salad that's as bright and fresh as Miami Beach itself.
