​Yesterday we heightened awareness of jiggly cocktails in an interview with Jelly Shot Test Kitchen author Michelle Palm, who is reinventing a frat-boy favorite for foodies with more discerning palates. Now we present an exclusive Short Order recipe, something Palm concocted specially for us.

Inspired by one of our favorite South Beach sushi bars, Doraku's "Fire-Breathing Dragon" captures classic Miami flavors -- sweet mango and spicy jalapeños for a kick. Palm took her task seriously, working through several versions before stumbling upon the ideal ingredient combo. The fresh jalapeño peppers gave her a bit of trouble, but in the end, everything "jelled" nicely.

Fire-Breathing Dragon (adapted from Doraku in South Beach)

Ingredients

2/3 cup mango vodka (tip: make your own by infusing plain vodka with dried mango slices)
1/8 inch thick slice of fresh jalapeño pepper (with seeds)
2/3 cup mango juice blend (she used Ceres)
2 envelopes plain gelatin
2/3 cup peach schnapps

Method

In a mixing glass, lightly muddle the jalapeño with the vodka. Set aside.

Pour the juice into a saucepan and sprinkle with the gelatin. Allow to soak for a minute or two. Heat on low, stirring constantly, until the gelatin is dissolved (about five minutes). Remove from heat.

Strain the vodka thoroughly to remove any seeds and add to the gelatin mixture with the schnapps. Stir well.

Refrigerate until fully set (several hours or overnight).
