Coolhaus Ice Cream Sandwich Truck Comes to Miami

Olive oil, rosemary, and basalmic-glazed fig with mascarpone cheese. They sound like dinner, but they're actually ice cream flavors made by Coolhaus, the architecturally-inspired ice cream sandwich food truck with unorthodox flavors, which debuts November 17.

"The spirit of the food truck is catching on," said Natasha Case, CEO of Coolhaus. "Miami is defining itself more and more as a food and food truck city."

Natasha and her friend, Freya Estreller, started thinking about Coolhaus when they began baking cookies and making ice cream in Freya's mom's kitchen in 2008. One day they bought an old postal truck on Craigslist, converted it into an ice cream truck with chrome rims (or Rem's) and thus began their coast-to-coast ice cream adventure. The company blossomed into a fleet of three vehicles located in Los Angeles, New York, and Austin, Texas. There is also a storefront planned in Culver City, California.

This isn't your typical ice cream truck, these 20-something ladies bring a whole new dimension to ice cream. They specialize in pairing unique hand-made ice cream flavors with locally baked cookies. Earl Gray-flavored ice cream could be combined with a peanut butter cookie, or try a brown butter candy bacon with a maple pancake cookie. They are also bringing back cocktail-flavored ice cream like strawberry mojito sorbet, orange chocolate Contreau and lychee martini, to name a few.

"Ours is pretty different," says Case. "That's kind of where our inventiveness comes in."

Vegan options are available too, like horchata (the Mexican rice-flavored drink) ice cream and ginger molasses and coconut almond cookies. They even have vegan-friendly, edible wrappers that are vegetable-based and printed with soy ink.

The name Coolhaus is a triple entendre, says Case. It pays homage to their architectural inspiration, Rem Koolhaas, a Dutch architect, one of the founders of the Bauhaus school of architecture from Germany. The name also references the ice cream sandwich itself, which is made like a house with a cookie roof and floor slab with ice cream walls.

Coolhaus will be part of the "Won't You Be My Neighbor?" event presented by YO Miami and the Black Key Group hosted by the venue Found at 2328 N. Miami Avenue on Thursday, November 17, in the Wynwood District starting at 8 p.m. and running until midnight. The theme is a plays on Mr. Roger's Neighborhood of "locals featuring locals," such as local acoustic and full bands and showcasing local artists and live collaborating artists.
