Mac'n Food Truck's Pumpkin Whoopie Pies, Perfect for Thanksgiving

We're just a few days out from Thanksgiving, and you'll soon have quite the spread in front of you. Before you go crazy this Thursday, try warming up your Thanksgiving appetite with a sweet treat from Mac'n Food Truck. The Miami New Times caught up with "Miami's Original Vegan Food Truck" to check out the pumpkin whoopie pies that one Twitterer called worthy of a "foodgasm."

"I like whoopie pies because they're not quite cookies, and they're not quite cupcakes," says Francesca Lacuesta, owner of the food truck called Mac'n. "I love anything that has pumpkin in it, especially this time because it makes me feel comfort(ed)."

The bite-size pastries are gluten-free, flavored with a subtle blend of spices that don't overpower ;other flavors, and sport a rich, creamy middle sandwiched by exquisitely moist cake. And they're sweetened just right. Foodgasm indeed!

Transforming comfort food, like seasonal whoopie pies, into a vegan-friendly treat is Mac'n's specialty, but it's not just recipes the food truck dishes out. Mac'n offers a fresh twist on classic comfort foods, creating cruelty-free versions of old favorites even discriminating non-vegans would love. Mac'n's delectable soul food has recently earned it a chance to win a spot at the Food Network's Annual South Beach Food & Wine Festival.

Braving the crowds on Black Friday--and have a little room left over from feasting the night before? Drop in on the Mac'n Food Truck during Bayfront Park's Tree Lighting & Food Truck Invasion.

"We're excited about that," said Lacuesta. "I heard the tree is really beautiful, and this is my first holiday season in Miami."

Keep a lookout for another seasonal variation of Mac'n's hit whoopie pies as Christmas time rolls around. "When we get closer to Christmas, I'm going to do chocolate whoopie pies with a peppermint cream cheese filling,"

In the meantime, take a bite out of another holiday-themed invention, sweet potato and collard green empanadas, mix it up with jerk-seasoned black bean burgers or go classic with hand-dipped veggie corn dogs.
