Menu Highlights: roasted chestnut soup with smoked Applewood bacon and candied ginger; Virginia honey glazed ham with truffled mashed potato, green bean gratin, sweet potato, pineapple-whiskey compote and corn bread bacon stuffing; bourbon pecan pie with eggnog anglaise and ginger ice cream ($55 per person).

Menu Highlights: winter pumpkin bisque; spiny lobster with spiced Chantilly and chervil; crispy pork belly with candied chestnut puree, Loxahatchee mint and cipollini; duck confit and foraged mushroom strudel with Valencia orange braised endive and truffle essence; stuffed breast of turkey, sweet potato brûlée, haricot verts, cranberry and chestnut puree; eggnog soufflé with cinnamon anglaise ($85 per person).
Menu Highlights: seared venison loin with pumpkin custard, huckleberries and roasted sunchokes; roast prime rib of beef with Yorkshire pudding; gingerbread tart with cranberry-apple and eggnog ice cream ($12 - $38).
Quattro Gastronomia Italiana
Menu Highlights: capon salad with crispy pancetta, red cabbage and quail eggs; prosciutto and veal tortellini in rich beef broth; champagne risotto with scampi and Osetra caviar; a trio of traditional beef stew, cotechino and veal meatloaf served with a pairing of Piemontese sauces (à la carte pricing, $18 - $48).
Menu Highlights: braised short ribs with vegetable and farro risotto; diver sea scallops with chestnuts, broccoli & chanterelle mushrooms; 21-day aged sirloin of beef with fingerling potatoes, preserved truffles and creamed spinach; Amedei chocolate cake with toasted almond gelato and salted caramel sauce ($75 per person).
Menu Highlights: seared foie gras with basil, spicy brazil nuts, toasted marshmallow and a molten boniato croquette; wagyu and cashew stuffed Peruvian turkey roulade with brown buttered gingered collards and sansho-rosemary glace; and kurisumasu keki, a Japanese christmas cake with yamamomo berries (à la carte pricing, $10 - $28).
