Alberto Cabrera Leaves The Local, Starts Frita Shop

Cabrera is going frita.
As of last week Chef Alberto Cabrera is no longer considering the Gables his 'hood. "I have ​decided to leave The Local," Cabrera wrote in an email.

"My partners and I cannot agree on the direction of the restaurant or an adequate compensation for my continued involvement. I have to this point sacrificed a lot on a personal and monetary level to see The Local succeed and I am proud of what I created."

After bringing the gastropub into the limelight -- and helping it garner not only numerous local awards for its eats but also recognition in the December issue of Esquire magazine as one of America's Top 10 Best Beer Menus -- Cabrera is going off on his own to open Frita Shop, a fast food concept he refers to as a "Cuban burger joint.

Don't expect rubbery patties and frostbitten sundaes. The chef promises burgers made with chorizo, croquettes and café con leche, and liquid nitrogen shakes, all created in front customers' eyes. He'll be retrofitting some iconic retail drive-through structures (we can't tell you what they are, but chances are you'll recognize the layout) with lots of glass so diners will be able to see the chefs at work.

"They'll be the first fast food joints with show kitchens," Cabrera states.

His first spots are slated for Kendall Drive near Baptist Hospital and Bird Road and 87th Avenue.

Also look for strong branding statements made by way of vintage tees with Cuban sayings and caricatures to be released soon.

We're pretty sure there's one we won't see: "A donde te quieren mucho no vengas a menudo." (A constant guest is never welcome.)

Great for the Local. This guy is a true fraud at best. Hot bag of wind, with no care for the business end of things, as long as he gets press. He will never last anywhere, as people ALWAYS realize, he will bankrupt them eventually. Lets see him try something with his own money, then he might actually care, and maybe step IN the kitchen....

I went several times to the Local when Chef Cabrera was there and the food was amazing. Just the other day I went for lunch and the food SUCKED. I got the special and it was a salmon burger,it was disgusting. I wish Chef the best in his new endeavor. He is an amazing Chef and I have been following his career for many year. BEST OF LUCK CHEF YOU DESERVE IT.

The Local has great beer list and a few nice cocktails. The food is good but I highly doubt it had anything to do with Cabrera. That guy hasn't lasted more than 8 months anywhere he has gone. The only place that does well and hasn't shut down is STK and thats because he's not there.  Him leaving The Local is probably a good thing for them. Don't know about the Frita concept doesn't look like the guy sticks around too long.

It is amazing to me how the mediocre minds of Miami love bashing their own local chefs. To "No Satisfaction", it's amazing how well you know the menu enough to bash it. You sure you don't work there, or worse........own the place?! And to "BeerGuy28", if you are so sure that you read he was fired from everywhere else, I would love for you to show me the link. Don't speak simply to talk smack, state some facts. Any monkey can go online and write a list of beers to put on tap. Why don't you talk about the service there? I'm sure you love seeing servers bring you your food while they are talking on the phone. The food was great there, as was the drinks, but I guess you would have to be a real foodie to see that. Starting a blog doesn't make you a foodie. Get your facts straight.

Hopefully the Local will get some better food now. I go there for drinks but dont think the food quality suits the prices. I always wondered why they hired this guy. A few reviews I've read smashed him and his concepts. Another talked about how he got fired from everywhere hes worked. Are we sure he wasn't fired?

As a chef I think Albert is amazing and anything he comes into will soar. So this business venture didn't pan out due to whatever reason, well he has the right and the drive to move on to bigger and better things. I will definitively eat what he cooks anywhere! Hope this next venture gives him the opportunity to kick ass!

I can't wait for Albert's new concept. It seems that whatever he puts his hands on becomes gold. Too bad he left The Local, I LOVED the food there!!! It's crazy how Miami is full of haters........keep the reviews on Yelp!!!!

Sounds like he will be taking over some old farm stores locations? That sounds pretty cool to me. Will he be calling the place La Vacita? It is the only fitting name I could think of!

The local is great for beer, but the food is horrible. It is overpriced and overrated. I had a shrimp po'boy for $14. On the menu it said it cam with ham which I thought was strange and when it came to the table there was NO HAM and I got bites of bread and lettuce they skimped on the shrimp so bad. The fries were crispy and burnt. Maybe him leaving the Local will be the best thing for the retaurant.

Interesting choice to put a frita place on Bird & 87th. That's mighty close to El Rey. Granted it's a different demographic Cabrera is going after but still... .

I'm sure that if you go on yelp you'd be surprised to find that the good of the restaurant(Food,drinks and SERVICE) out weigh the bad. everyone is entitled to an opinion, but for you to trash their service,food,or drinks based on your maybe "bad experience" isn't fair especially since its obvious from the reviews that they must be doing something really well. I'm sure you can go to any of the tops spots anywhere around the world and fine something wrong if that's all you're focusing on. The Chef and his concepts will be missed. I remember the frita before it was taken off the menu and I'm glad he's using that concept for his new place because it was a shame to see that be replaced by the current slider. Much success to Chef and the Local, I hope the bias "groupies" on both sides learn to act like adults (since you have to be 21 and over to enjoy the full experience there any way.) and move forward with whining and bashing.

his booth @sobewff last year was beyond disorganized and he looked like he'd rather be somewhere else the whole day.  don't register this year if you don't want to be there! i'm sure they can fill his spot by people who would love to serve the constant crowd
