Pastry Chef Cindy Kruse Out of Acme Bakery & Coffee

Alejandro Ortiz will take over for Cindy Kruse.
On Tuesday, the folks behind The Federal Food Drink and Provisions announced their most recent undertaking: Acme Bakery and Coffee, slated to open in Wynwood around mid-September. Spearheading the force behind the homemade breads, pastries, and candies was Cindy Kruse, formerly of Gigi, but Short Order just received word that she will no longer be part of the project.

"We wish her the best of luck," says Acme partner, Aniece Meinhold, "just hoped she would have stuck around for the long haul."

Instead, The Fed's third partner, Alejandro Ortiz, and his wife, Alysia Ortiz, will be taking over for Kruse.

"It's all gravy," Meinhold says. "Alejandro is a phenomenally talented baker and pastry chef." It seems the responsibilities are being left in good hands.

Ortiz is a Culinary Institute of America graduate and formally trained in pastry. Alysia, on the other hand, will be handling all front-of-the-house operations. She's also working on developing a line of jams, jellies, and pickles, which will be available for retail sale once the bakery opens.
