Gravity Brewbar Soft Opening in Wynwood December 7

The pre-game starts two days before that, on December 5, at The Broken Shaker starting at 8 p.m. The festivities last until 1 a.m. The new place is located at 299 NW 25th Street, only a block from the arts district, and opening time is set for 7 p.m. This of course depends upon whether Gravity receives its permits in time.

The Gravity opening is meant to coincide with Art Basel, for which Gravity is also making beer. "Basically I wanted to do the opening with the Art Basel crowd to get our name and presence out there," Gravity owner Diego Ganoza says.
As far as the interior is concerned, Ganoza was able to give a few details. It will be minimalist at first, but will soon be decorated with vintage space age and atomic age memorabilia. The inside will be divided into two separate parts: the bar and brewery.
Remember the bottling line? Ganoza is still working on having it operational within six months. For now all of the beer will be kegged. When the brewery is up and running, 750 mL empty champagne bottles will be used to bottle the beer.
All beer recipes are developed by Ganoza and his brewer, Robert Tejon, formerly of the Misfit Home-Brewer's club.
Gravity will also feature a menu with items ranging from $6.50 bratwursts to $14 Korean fried chicken.
So what is going to be on tap? Ganoza is planning a traditional English old ale fermented with Brettanomyces, a special type of yeast strain commonly used to make English ales, lambics and certain Belgian-style beers such as saisons and Trappists.
Additionally, there will be an all-cherry cider fermented with a Belgian wild yeast for a sweet and tart flavor, a triple India pale ale that is brewed with three times the amount of hops and malt what a typical IPA receives, and more.
In what started off as a just a conventional tavern two years ago, Ganoza is building his vision of a Wynwood brewpub. "I figured Wynwood deserves something more original and we could provide an original beer," Ganoza says.
