Mark the date. Cochon 555 will be making its way through Miami April 21 at the Four Seasons Miami in Brickell.

The pork-centric affair that was dubbed "the event of the year" in 2012 will be making its national rounds again, advocating the expansion of sustainable farming and heritage breed pigs. Last year's wine pairing soirée proved well for Michelle Bernstein who took home the honor of being the winner of the chef battle. If you were there, you'll recall a controversial tattooed hog in the middle of the ballroom, "fat pig" press-on tats from the Michael's Genuine crew, and mason jar bacon bouquet center pieces. Lest we forget the bacon caramel apples from Jeff McInnis and Yardbird, and the bacon ice cream from Aaron Brooks and Edge.

As if it were even possible to make the event even better, new additions have been made to the 2013 tour. Check those out, and see what founder Brady Lowe has to say about it after the jump.

This year, there will be a live streaming cocktail competition called "Punch Kings" featuring local mixologists. There will also be Cochon's ode to "Guy on His Buffalo" Cocktail Series, a special Mezcal tasting, and the launch of the TarTar Bar.

From the money Cochon has raised, the tour has been able to support family farming across the country. "Thousands have feasted on heritage pigs," says Lowe in a public message on Cochon. "And thanks to the media, our 1 billion impressions reinforce thousands of handshakes in responsible agriculture each year."

He goes on to say, "Before 2013, the tour will have donated more than $270,000 to charities and directly paid ove $400,000 to great farmers across the country."

2013 will mark a special event in the tour's history, as it will be celebrating its fifth anniversary.

Pre-sale tickets are available here.

When Short Order receives word of the chefs chosen for the Chef Course competition, we'll announce them. In the meantime, Bernstein, Michael Schwartz, Aaron Brooks, James Petrakis of Ravenous Pig and James Strine of Cafe Boulud should be able to offer any potential candidates handy porcine advice.
