Proper Sausages features small-batch artisan sausages.
No longer do fans of Proper Sausages have to follow the husband and wife team of Freddy and Danielle Kaufmann to a local farmers's market to purchase their artisan sausages made with quality meats and spices.

After months of planning, Proper Sausages opens its doors for business tomorrow, Saturday, March 23. Located at 9722 NE Second Avenue in Miami, the shop will open Monday - Saturday from 10 a.m. to 7 p.m.

The shop will feature the couple's most popular sausages daily, with seasonal specials added into the mix. Look for the classic Proper, the Dub, fig & blue cheese, prune & cognac, Proper chorizo, and lamb & harissa sausages, with most pork-based sausages selling for $12 per pound (beef and lamb sausages are around $14 per pound).

Freddy Kaufmann told Short Order that in addition to the sausages, the shop will offer Florida Wagyu ribeyes and burger patties, New York strips, filets, and skirts from Jackman Ranch in Clewiston. "These are cuts of meat that many people aren't used to seeing retail. If you're already one of our customers, then you'll know the quality of the meat we use. We believe that an animal has to be treated well and be healthy."

Kaufmann is also excited about the shop's brew selection. "All of our beers are either brewed in Florida or are influenced by Florida. We'll have Cigar City, Holy Mackerel, and Michael's Genuine Home Brew, to name a few." For wine, the Kaufmanns have selected offerings from boutique vineyards. "We wanted to find wines made from grapes raised by people who really care about what they're doing," Kaufmann told us.

On weekdays, the shop will sell prepared foods to offset the usual "Subway or Pizza Hut" dilemma locals face -- much of it vegetable-driven. "We want to have a selection of healthy foods that will give you energy for the rest of the day."

Also in the works? Some select local produce and freshly made pastas. "We don't want to be a shop that sells everything for the sake of selling, but we'd like to be able to offer our customers the makings of a good, simple meal that they can take home -- from the sausage to the wine."
