Chef Jeremy Ford offers up one of his creations.
15 Steps, a farm-to-fork restaurant will officially open at the Eden Roc Miami Beach on December 1, replacing the lauded 1500 Degrees that also featured locavore cuisine.

The restaurant, which is named after the "15 steps necessary to grow a vegetable, catch a fish, or cook the perfect steak", will showcase local produce and proteins, and will feature vegetables and herbs grown at the resort's own sea spray organic garden.

Bounties from the property's private garden include rosemary, sage, mint, basil, heirloom tomatoes, spinach, Brussels sprouts, kale, and celery.

The menu, helmed by executive chef Mark Henry and signature chef Jeremy Ford, will rotate seasonally, with month-to-month specials focusing on sustainability and regional produce.
