KC Healthy Cooking in North Miami: Try the Tuna Salad Cupcake
Navigating Whole Foods' salad bar isn't always easy. You might overspend and make amateur mistakes, like choosing meat packed with heavy -- and costly -- bones.

Thankfully, KC Healthy Cooking is only a block away from North Miami's Whole Foods store. The casual restaurant resides on the bottom floor of an office building and offers plenty of healthful breakfast and lunch options, all without the stresses of a salad bar.
Menu items range from smoothies to vegan soups and salads. On a recent trip, I ordered the organic buckwheat soba noodles ($9.95) with chicken, broccoli, red pepper, onions, and ginger. The noodles were a bit overcooked and the flavor was too mild, so I doused them in Bragg Liquid Aminos.
No flavor enhancements were necessary for the soup of the day, a vegan pumpkin variety ($3.95). It warmed me up nicely. Other soup options include lentil, chicken, and black bean.
The most interesting dish was the off-the-menu "cupcake" -- a cake-like concoction layered with quinoa, avocado, and tuna salad. Chef Jerry Dominique expertly handles its delicate assembly. You would never find this masterpiece at a salad bar.
