Whole Foods South Beach Hosts Free Raw Food and Juicing Classes
At this point in the month, you've probably broken nine out of ten of your new year's resolutions. But if you're still clinging halfheartedly to that detox/weight-loss/clean-eating "commitment," don't give up and gorge on pastelitos just yet.

At Whole Foods South Beach, healthy-eating specialist Jordan Wolfe hosts a series of detox-centric classes designed to keep you in line during 2014. Still ahead in January's schedule: juicing/smoothies, raw soups and salads, and a raw foods rundown. We spoke with Wolfe about what he's planning and scored a few recipes to get you going.
Though Wolfe isn't a nutritionist, he's a lifelong vegetarian and healthy eater. As far as juice cleanses and raw food diets, he's a fan, and here's why:
"Basically, the whole point is to give your organs a break from digestion. Every day, 30 percent of our energy goes to digestion. This way we give our body a break, we regenerate our cells, our organs are able to get rid of the toxins that build up over time, from food to pollution to metabolic processes. You can't avoid toxins. I periodically like cleanses because that seems to be the most natural way to rid yourself of the toxins."
Wolfe is also famous for his green smoothies, which he'll showcase at next week's class. "I calculated it, and I've had over 700 gallons of green smoothie in the last five or six years," he says.
He's all about making sure his recipes are good for both the bod and the taste buds, so expect to enjoy the experience. "Everything I make is delicious and healthy -- those are my only two rules."
The January classes are designed as an intro to the concept of cleanses and clean eating. In February, the store will begin the Engine 2 Diet challenge (which involves 28 days of plant-based eating), so the classes are a way to get your feet wet ahead of the big dive.
Here are a few recipes courtesy of Wolfe:
Through the Roots Detox Tea
1 tsp grated burdock root
1 tsp grated ginger
1 tsp chopped mint leaves
¼ lemon-squeezed for juice
1. Add burdock and ginger to 12 ounces of boiling water. Boil for 8 minutes.
2. Add chopped mint and boil for an additional two minutes.
3. Strain and squeeze 1/4 lemon into the mix. Sip warm.
Bok Choy Cooler
2 heads bok choy
1. Juice, stir, and drink.
Cool as a Cuke Juice
1/4 pineapple-cut away from skin
1 medium cucumber
1. Juice, stir, and drink.
If you want to get on the healthy-living bandwagon (or at least give some yummy chocolate avocado smoothies a go), the rest of the class schedule is as follows: Juicing and smoothies Thursday, January 16, at 6:30 p.m.; raw soup and salads Wednesday, January 22, at 6:30 p.m.; and raw foods Wednesday, January 29, at 6:30 p.m.
