Tom Colicchio to Open Farm-to-Table Restaurant at 1 Hotel & Homes South Beach

Tom Colicchio is opening a farm-to-table dining concept at 1 Hotel & Homes South Beach.
Top Chef mentor/judge Tom Colicchio will officially join the roster of celebrity chefs with Miami Beach eateries when his new restaurant opens at the 1 Hotel & Homes South Beach this fall.

The chef cofounded Gramercy Tavern with Danny Meyer in 1994 and then opened Craft in 2001. He also owns several other restaurants, including Craftbar, 'Wichcraft, Craftsteak, Riverpark, Heritage Steak, Topping Rose House, and Colicchio & Sons. His restaurant empire includes locations in New York City, Las Vegas, San Francisco, and now Miami Beach.

Although he is best known for his tenure on the Emmy Award-winning Top Chef, Colicchio is a seasoned chef, winning multiple James Beard Awards, including Best Chef-New York (2000), Best New Restaurant (2002, for Craft), and Outstanding Chef (2010). His book, Think Like a Chef, won the James Beard KitchenAid Cookbook Award in May 2001.

Colicchio's new Miami Beach restaurant is yet unnamed but will be a farm-to-table concept, with a specific concentration on seafood dishes with Mediterranean flavors, and will feature locally sourced produce. This concept sounds most like his restaurant Colicchio & Sons. Opened in early 2010, that restaurant employs small-batch ingredients from microproducers and family farmers. The restaurant earned three stars from the New York Times.

Colicchio's restaurant is part of the 1 Hotel & Homes project, located on Collins Avenue between 23rd and 24th streets. The property will feature 406 hotel rooms, 161 residences, four pools, a full-service health club and spa, and other onsite dining options. Prior to this multimillion-dollar renovation, the property had previous lives as the Perry, the Gansevoort, and Rooney Plaza.

Lost ALL respect for Tom. His shenanigans with the last Season of Top Chef did it for me. I will NEVER lay foot in any of his eateries.

Organic Farm food is expensive and has short shelf life, there's no cheap way around that.

I love how all these celebrity chefs open up restaurants in the tourist zones with hoity-toity food priced outside the average person's comfort zone.... then some frou-frou critic raves all about it (read between the lines *paid*) and suddenly a year or two later the place closes...
