18. Chef Jeremiah: Founder of Miami's Food Truck Movement
New Times' Best of Miami 2014 issue arrives June 19. To celebrate, Short Order is paying tribute to Miami's culinary all-stars. These people forged our city's food scene into what it is today -- a thriving amalgam of tastes and cultures. Through their insight and talent, they've given the city a unique flavor and paved the way for bright new chefs and restaurateurs to follow their lead and take the Miami food scene into the future.
Jeremiah Bullfrog should open a restaurant. The Miami-born chef has the following, the recipes, and could likely wrangle the talent for it, but it won't happen. He's done brunches, dinners, all-out pig parties; high brow and low rent.
Instead, the man who in 2009 launched Miami's food truck movement from a tricked out airstream trailer fitted with sous vide vessels, CVap ovens, and a secret stash of beers, has been personal chef to Rick Ross while always finding an unusual way of deliver food to the masses.
In 2009, he told us it was better hours and better pay.
Before the GastroPod truck, he owned Bullfrog Eatz, a bistro café that became a popular hangout and music venue in Wynwood when the neighborhood was a still sketchy shadow of itself.
Most recently, it's been house cured and smoked meats made at his Subatomic Sandwiches inside the Wolfsonian Museum on South Beach. The spot closed last week as the museum undergoes renovation, leaving time to focus on another project that he said will launch at Bonnaroo in mid-June, which GastroPod has cooked for in years past.
Bullfrog did a brief stint at Ferran Adria's El Bulli in Roses, near Barcelona, 2001, but left after beefing with another stagiare over the squeezing of almond milk.
In His Own Words
